1 ripe banana, mashed
1 egg, lightly beaten
1 scoop of Procover Vanilla Coconut
1/3 cup oats
Greek yoghurt, berries, kiwi fruit, mixed seeds, coconut flakes, cinnamon
Mix mashed banana and beaten egg together. Add Procover and oats and mix until well combined. Place a small fry pan on medium heat. Spray with oil and pour 1/2 the mixture onto the pan, spreading it evenly. Allow to cook until top of pancake is beginning to cook and then flip (may fall apart if not cooked well enough) and allow to brown on other side. Repeat with the rest of the mixture. Serve with desired toppings and enjoy!
