Procover Protein Bars

MAKES 18 BARS

1 cup pitted dates
1 cup almonds
¾ cup Procover
¼ cup cocoa
1 teaspoon vanilla extract
¼ cup skim milk
½ cup quinoa flakes

Line a 15cmX20cm slice tin with plastic wrap. Place dates and almonds in a food processor and whiz until fine. Add Procover, coacoa, vanilla, milk and quinoa and whiz until combined & coming together in a ball. Press mixture evenly into the slice tin. Place into freezer for 20 minutes (or into fridge for 1-2 hours) until set. Remove from tin and cut up into 18 bars. Keep in an airtight container in the fridge.
