Procover & Amy’s Grains baked oat muffins

Makes 12

2 cups Amy’s grains
2 scoops Procover
1 cup mashed banana
1 cup milk
1/2 cup shredded coconut
1 tsp bicarbonate of soda
1 tsp vanilla
1 tsp cinnamon
2 eggs, lightly beaten
Chosen toppings (we suggest berries, nuts, seeds, coconut, cocao nibs or dried fruit)

Preheat oven to 180C. Line a muffin tray with 12 patty pans. In a medium bowl, mix banana and eggs together. Add the milk and vanilla, mix well. Combine Amy’s grains, coconut, Procover, bicarbonate & cinnamon together in a separate bowl. Mix dry ingredients into the wet mix until just combined. Spoon approx 1 1/2 tbs of mix into each patty pan & top with your favourite toppings. We used fresh strawberries, blueberries, coconut flakes and cacao nibs. Bake for 20-25mins until lightly brown and set. Allow to cool before serving. Store in an airtight container or freeze in individual ziplock bags. Enjoy!
