Homemade Granola

Makes approximately 5-6 cups of Granola

2 cups Rolled Oats
3/4 cup Almonds, roughly chopped
1/2 cup Pistachios, roughly chopped
1 cup shredded coconut
2 tbs Chia Seeds
1/2 cup dried Cranberries
3 tbs Honey
3 tbs Coconut oil, melted

Preheat oven to 150deg and line 2 baking trays with baking paper. Place all dry ingredients into a large bowl and mix well. Mix Coconut oil and Honey in a small bowl. Pour Coconut/Honey mixture over dry ingredients and mix well. Spread mixture evenly over the 2 baking trays. Place in oven for 10mins or until lightly brown, mix granola on tray and return to oven for another 10mins or until lightly brown. Remove from oven, and allow to cool fully. Store in an airtight container. Enjoy as a cereal, with yoghurt, on top of your smoothy bowls, as a snack, anyway you like!
