Chocolate Procover Balls

MAKES 24

100g cashews
100g almonds
270g of pitted dates
100g dried apricots
1 tablespoon chia seeds
1 tablespoon peanut butter
1 tablespoon of Procover
1 tablespoon cacao powder
1 tablespoon ground cinnamon
2 tablespoons of honey
100g desiccated coconut to coat

Combine cashews and almonds in a food processor and whiz until fine. Add dates and apricots and whiz until combined. Add peanut butter, chia seeds, cacao powder, Procover, cinnamon and honey and process until the mixture begins to form a ball. Roll mixture into 24 small balls then coat in coconut. Place in fridge to set. Enjoy!
