Healthy Choc Pudding

serves 6

2 1/2 cups low fat milk
1/8 tsp salt
1/4 cup cocoa powder
1/3 cup honey
3 tbsp cornstarch
3/4 tsp vanilla extract

Heat 2 cups of milk, salt, cocoa powder, and honey in a pan. Meanwhile, whisk the cornstarch and left over 1/2 cup milk in a small bowl until dissolved. When the 2 cups milk are warm, add the cornstarch mixture and bring to a boil. Once boiling, stir constantly for 2 minutes. Lower to a simmer for an additional minute, then turn off the heat. Stir in the vanilla. Pour mixture into 3 glasses and place in the refrigerator to thicken overnight. Serve and enjoy!
