Carrot Cake Muffins


1 cup whole meal flour
¼ cup quick oats
¼ cup brown sugar
1 ½ teaspoons bicarb soda
1 teaspoon cinnamon
2 eggs
180g apple puree
1/3 cup olive oil
2 medium carrots grated
½ cup sultanas

Preheat oven to 180°C and place 12 patty pans into a 12 cup muffin tin. Sift flour, bicarb soda and cinnamon together in a bowl. Mix in oats and brown sugar. In a separate bowl whisk together eggs, oil and apple puree. Create a well in dry ingredients, add wet ingredients and mix until just combine. Mix in grated carrot and sultanas. Spoon mixture evenly into each patty pan. Bake for 10-15mins until golden and cooked through. Allow to cool and serve. Enjoy!
