Banana Muffins

Makes 12

¾ cup coconut oil
1 cup honey
6 egg whites
2 teaspoons vanilla extract
4 bananas mashed
1 ¼ cup wholemeal flour
1 cup rolled oats, pulsed to make flour
1 teaspoon cinnamon
1 ½ teaspoons baking soda
¾ cup milk
1 cup dessicated coconut
¾ cup dark chocolate chips

Preheat the oven to 175°C. Grease a muffin tray. In a large bowl cream the coconut oil and honey. Add egg whites, vanilla and banana and mix until combined. Mix together wholemeal flour, oat flour, cinnamon and baking soda. Mix flour mixture and milk alternately into banana mixture until just combine. Stir in coconut and chocolate chips. Spoon mixture into muffin tray and bake for 20 minutes or until golden. Serve warm and Enjoy!
