Banana Blueberry low sugar muffins

Makes 16

2.5 cups self raising flour
1/2 cup brown sugar
2 eggs lightly beaten
2/3 cup coconut oil
1 cup Greek yogurt
1/4 cup milk
1 large banana, mashed
2 cups blueberries

Preheat the oven to 190C. Place patty pans in muffin tins.
Combine the flour and sugar in a large bowl.
Combine the eggs, oil, yogurt, milk and banana in another bowl.
Add the wet ingredients to the dry. Stir until just combined. Gently fold in the blueberries.
Spoon the batter into patty pans placed in muffin tins and bake for 20mins until golden.
Cool on a wire rack, then store in an air tight container. Enjoy!
