Vegetable and bean soup

Serves 6

1 tsp olive oil
1 clove garlic, finely chopped
4 medium potatoes, diced into 1cm pieces
2 medium carrots, chopped
300g green beans, halved
2 cups frozen mixed peas and corn
700ml stock (any you like)
1 squash, chopped
1 can mixed beans, drained
2 tbs chopped parsley
salt and pepper to taste

In a large saucepan over medium heat, place olive oil, garlic and potatoes. Cook for 5mins before adding the carrots. Cook for a further 5mins. Add the peas, corn, green beans and stock and gently bring to the boil. Once at the boil, lower heat to allow soup to simmer. Add Squash, beans and parsley. Allow to simmer for 20-30mins. Season with salt and pepper. serve with your favourite crusty bread and Enjoy!
