Pad Thai

Serves 4

150g Rice Noodles
2 chicken breasts without skin, cubbed
2 cloves of garlic, crushed
2 spring onions, chopped
2 tablespoons peanut oil
2 tablespoons chopped chives
3 tablespoons brown sugar
3 tablespoons unsalted peanuts, chopped
2 tablespoons fish sauce
juice of 1 lemon
1 egg beaten
1 cup bean sprouts

Prepare rice noodles as per package and set aside. Place oil in a large frying pan and heat on a medium heat. Fry garlic, onions and chicken until chicken is brown. Add chives, sugar, peanuts and fish sauce and cook for 2 minutes. Add lemon juice. Stir through egg slowly until incorporated. Add noodles and bean sprouts, mix and serve immediately.
