Overnight Apple Crumble Oats

SERVES 2-3

1/2 cup rolled oats
1 tbsp chia seeds
2 tbsp shredded coconut
2 tbsp almonds chopped
1 tsp cinnamon
1/4 tsp ginger
pinch nutmeg
1 apple, peeled and cubed
1 tsp vanilla extract
1 ripe banana mashed
1 cup milk
1/2 cup coconut milk or water
greek yoghurt to serve

In a bowl mix together oats, chia seeds, coconut and spices. Add apple cubes and combine. In a small bowl mash the banana. Add vanilla extract, milk and coconut milk/water and stir until combined. Pour wet mixture into the dry mix and mix until well combined. Pour mixture into jar, put on lid and allow to sit in fridge overnight (if you don’t have a jar, put in a container or cover bowl with cling wrap). In the morning divide oats between 2-3 bowls and top with greek yoghurt. Enjoy!
