Easy Poached Eggs on Sourdough

Serves 1

2 eggs
2 tbs white vinegar
2 slices of sourdough, toasted
1/2 Avocado, sliced
4 slices Haloumi cheese
handful of spinach leave
salt and pepper to taste
lemon wedge to garnish

Fill a small saucepan with approximately 8cm of water. Add vinegar and bring water to the boil. In the meantime, crack each egg into a cup, set aside. Toast your Sourdough and fry the Haloumi in a fry pan until golden each side. Layer the Sourdough with spinach and cooked Haloumi. Once boiling, reduce the heat on the water so it is just simmering. Stir the water with a wooden spoon to create a small whirlpool. Gently slide each egg into the water, turn off the heat and place a lid on the saucepan. leave for 2-3 mins if a runny yolk is preferred or 3-4 mins if a hard yolk is preferred. When the eggs are ready use a slotted spoon to gently remove the eggs from the water allowing excess water to drain away and place on your prepared Sourdough. Sprinkle with salt and pepper and garnish with lemon. Enjoy!
