Banana & Coconut Porridge

SERVES 1

1/3 cup rolled oats
2 X 1/3 Cup milk
1 tbsp chia seeds
1 tbsp shredded coconut
1 banana
cinnamon
extra coconut

In a small bowl, place oats and 1 X 1/3 cup of milk. Sprinkle the chia seeds across the top of the oats, then cover with the coconut. Place in fridge overnight (or minimum 3 hours). Remove from fridge, add the second 1/3 cup milk and stir until combined. Place in microwave and cook for 2 1/2 mins (or to taste). Slice banana over the top, sprinkle with cinnamon & extra coconut to serve. Enjoy!
