Asian Chicken Noodle Salad

Serves 4

500g chicken breast, cut into strips
250g rice noodles
1 cos lettuce, chopped
2 carrots, peeled in strips
1/2 cucumber, peeled in strips
4 cups snow peas, halved
1 clove garlic minced
1/3 cup olive oil
1/4 cup soy sauce
2 tbs brown sugar
2 tbs fish sauce
1 tsp chilli flakes

In a pan, cook chicken until lightly browned. Toss all the vegetables in a large bowl. Cook rice noodles as per packaging. In a small bowl mix together oil, soy sauce, brown sugar, fish sauce, garlic and chilli until well combined. Once chicken and noodles are cooked toss through salad. To serve pour the dressing over the salad and divide into 4 bowls. Enjoy!
