Vanilla Coconut Procover Slice

Makes 12 pieces

Base:
2 cups rolled oats
1 cup mixed almonds & cashews
4 tbs honey
1 tbs coconut oil
1 tsp salt
1 1/2 tsp cinnamon
1 ripe or frozen banana
1 egg
1 1/2 tsp vanilla
1 scoop Procover Vanilla Coconut

Topping:
1/2 cup rolled oats
1/4 cup roughly chopped almonds & cashews
1/4 cup shredded coconut
1/4 cup mixed seeds
1/4 cup of milk (any kind you like)
1/4 teaspoon cinnamon

Preheat oven to 180deg. Line a 20cmx20cm baking pan with baking paper. Add all ‘Base’ ingredients in to food processor and process until completely combined and wet. Pour into prepared pan and smooth out until evenly spread. Bake for 8-10 minutes.
In the mean time, combine all ‘Topping’ ingredients in medium bowl and stir to combine. Removing pan from oven, spread topping evenly over and lightly press down into base. Bake for an additional 15 minutes.
Allow to cool, cut into 12 even slices. Store in an airtight container or freeze in individual freezer bags. Great as a snack with a coffee, or with fresh berries and yoghurt. Enjoy!
